Ingredients

  • 2 Tbsp. olive oil
  • 1 cup chopped broccoli
  • 1 cup thinly sliced carrots
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 2 cups cooked corkscrew macaroni
  • 3 to 4 boneless, skinless chicken breasts, cubed
  • 1 can cream celery soup
  • 1/2 tsp. garlic powder
  • 1 cup milk
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. In a skillet, fry the cubed chicken breasts until cooked through.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, cook all vegetables and garlic powder until tender, stirring often.
  4. Stir in the cream celery soup, milk, and grated Parmesan cheese.
  5. Add the cooked macaroni and chicken to the skillet and heat thoroughly, stirring often.
