Ingredients

  • 6 boneless chicken breasts with skin on
  • 1 medium onion
  • 1 Tbsp butter
  • 10 oz frozen chopped spinach, drained and thawed
  • 1 lb whole milk ricotta cheese
  • 1 egg
  • 1/4 cup parsley
  • 1 Tbsp fines herbes
  • salt
  • pepper

Instructions

  1. Saute the onion in butter until soft.
  2. Combine the cooked onion with frozen chopped spinach, ricotta cheese, beaten egg, parsley, fines herbes, salt, pepper, and nutmeg; mix well.
  3. Trim excess fat from the chicken breasts.
  4. Loosen the skin from one side of each chicken breast and stuff with approximately 1/3 cup of the spinach and ricotta filling.
  5. Tuck the skin under the breast to form a round dome shape.
  6. Place the stuffed chicken breasts in a buttered Pyrex dish.
  7. Preheat the oven to 350°F (175°C).
  8. Bake the breasts for 30 to 35 minutes until golden brown.
  9. Avoid overcooking to keep the chicken moist.
  10. Cool slightly before serving; the chicken can be sliced into smaller portions.
