Instructions
- Saute the onion in butter until soft.
- Combine the cooked onion with frozen chopped spinach, ricotta cheese, beaten egg, parsley, fines herbes, salt, pepper, and nutmeg; mix well.
- Trim excess fat from the chicken breasts.
- Loosen the skin from one side of each chicken breast and stuff with approximately 1/3 cup of the spinach and ricotta filling.
- Tuck the skin under the breast to form a round dome shape.
- Place the stuffed chicken breasts in a buttered Pyrex dish.
- Preheat the oven to 350°F (175°C).
- Bake the breasts for 30 to 35 minutes until golden brown.
- Avoid overcooking to keep the chicken moist.
- Cool slightly before serving; the chicken can be sliced into smaller portions.
