Ingredients

  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1/2 cup butter or margarine
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 cups chicken broth
  • 1 1/2 cups milk
  • 4 cups shredded mozzarella cheese, divided
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon white pepper
  • 2 cups ricotta cheese
  • 1 tablespoon minced fresh parsley
  • 9 lasagna noodles, cooked, drained and rinsed
  • 2 cups cooked chicken, cubed
  • 2 (10 oz.) packages frozen spinach, thawed and well drained

Instructions

  1. In a saucepan, sauté onion and garlic in butter until tender.
  2. Stir in flour and salt; cook until bubbly.
  3. Gradually stir in broth and milk.
  4. Bring to a boil, stirring constantly.
  5. Boil for 1 minute.
  6. Stir in 2 cups mozzarella, 1/2 cup Parmesan, basil, oregano, and white pepper; set aside.
  7. Cook lasagna noodles, drain, and rinse.
  8. In a mixing bowl, combine cooked chicken, thawed spinach, ricotta cheese, minced parsley, and half of the remaining Parmesan cheese.
  9. Layer cooked noodles, chicken mixture, and cheese sauce in a baking dish.
  10. Repeat layers as needed, finishing with cheese sauce on top.
  11. Sprinkle remaining mozzarella and Parmesan cheese over the top.
  12. Bake in a preheated oven at 375°F (190°C) for about 30-35 minutes until bubbly and golden.
