Ingredients

  • 6 corn tortillas
  • 1 can cream of chicken soup
  • 1 (4 oz.) can chopped green chilies
  • 1/2 cup chicken broth
  • 1 medium onion, chopped
  • 2 cups chopped cooked chicken
  • 1 cup shredded Cheddar cheese
  • 1 tomato, chopped
  • shredded lettuce
  • salsa

Instructions

  1. Place tortillas on a baking sheet and bake at 300°F, turning once, until crisp.
  2. Set aside and preheat oven to 350°F.
  3. In a small bowl, combine cream of chicken soup, chopped green chilies, and chicken broth.
  4. Pour some soup mixture into the bottom of a 2-quart casserole dish.
  5. Break up 2 tortillas and layer over the soup.
  6. Sprinkle with chopped onion and top with one-third of the cooked chicken.
  7. Add one-third cup of shredded cheese on top.
  8. Repeat the layers, ending with a cheese layer. Cover and bake until bubbly, about 30 minutes.
  9. Serve topped with chopped tomato, shredded lettuce, and pass with salsa.
