Ingredients

  • 6 chicken breasts
  • 1 (5 1/3 oz.) can evaporated milk
  • 1/2 cup sour cream
  • 1 (10 oz.) can cream of chicken soup
  • 1/2 cup Mexican hot sauce
  • 1 medium onion
  • 1/2 cup chopped celery
  • 1 (8 oz.) can green chilies
  • 6 corn tortillas
  • 1/2 cup grated Monterey Jack cheese
  • 1/2 cup Cheddar cheese

Instructions

  1. Cook chicken breasts in a glass dish covered with waxed paper for 16 to 18 minutes.
  2. Cool the chicken and tear into bite-sized pieces.
  3. Combine the cooked chicken, sour cream, evaporated milk, cream of chicken soup, hot sauce, chopped onion, chopped celery, green chilies, tortilla pieces, and cheeses in a large bowl.
  4. Mix well until all ingredients are evenly incorporated.
  5. Microwave the mixture for 12 to 14 minutes, turning halfway through the cooking time until hot and bubbly.
