Ingredients

  • 2 to 3 lb. chicken cutlets
  • 2 c. bread crumbs
  • 2 eggs
  • oil
  • 4 Tbsp. butter or margarine
  • 2 Tbsp. parsley flakes
  • 10 oz. fresh mushrooms
  • 1/2 c. white wine
  • 1 onion
  • 1 can chicken broth
  • 1 jar chicken gravy

Instructions

  1. Fry chicken cutlets in a small amount of oil by first dipping in eggs and bread crumbs. Drain on paper towels and set aside.
  2. In a large skillet, melt 4 tablespoons of butter or margarine.
  3. Add chopped onion and cook until softened.
  4. Slice the fresh mushrooms and add them to the skillet, cooking until browned.
  5. Pour in 1/2 cup of white wine and cook until reduced by half.
  6. Add chicken broth and chicken gravy to the skillet, stirring to combine.
  7. Simmer the sauce for several minutes to allow flavors to meld.
  8. Return the fried chicken cutlets to the skillet, coating them with the sauce.
  9. Serve hot, garnished with parsley flakes.
