  • 1/2 c. half and half
  • 1 tsp. salt
  • 1/4 tsp. tarragon leaves
  • 1/4 tsp. pepper
  • 1 (15 oz.) can artichoke hearts
  • 6 green onions

Instructions

  1. Preheat oven to 350°F.
  2. Brown chicken breasts on all sides in oil and butter.
  3. Remove chicken and place in a long casserole dish.
  4. Saute mushrooms in the oil and butter used for browning the chicken.
  5. Stir in flour to the mushroom mixture.
  6. Add cream of chicken soup, sherry, and chicken broth. Simmer about 10 minutes or until thickened.
  7. Stir in half and half, salt, tarragon leaves, and pepper.
  8. Pour the sauce over the chicken in the casserole.
  9. Bake uncovered for 1 hour.
  10. Add artichoke hearts and chopped green onions on top.
  11. Bake for an additional 15 minutes.
  12. Serve with wild rice.
