Ingredients

  • 4 to 4 1/2 lb. chicken
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 small onion
  • handful of celery tops
  • 1/3 cup butter
  • 1/2 lb. mushrooms
  • 1 Tbsp. minced onion
  • 1 cup flour
  • 1/2 pint light cream
  • 1/2 pint chicken broth
  • 1/8 tsp. dry mustard
  • additional salt to taste

Instructions

  1. Place the chicken, salt, pepper, onion, and celery tops in a pressure cooker and cook until tender.
  2. Cut the cooked chicken into large pieces and strain the cooking liquid, reserving it for later.
  3. In a skillet, cook the butter, mushrooms, and minced onion until tender.
  4. Add the flour, light cream, chicken broth, dry mustard, and salt to the skillet to make a sauce.
  5. Combine the sauce with the cooked chicken and allow to cool if preparing ahead.
  6. Layer noodles, ham, almonds, and the chicken mixture in a casserole dish.
  7. Bake the casserole at 350°F (175°C) for 45 minutes until heated through and bubbly.
