Ingredients

  • 4 large whole chicken breasts, halved, skinned and boned
  • all-purpose flour
  • 1/2 cup margarine
  • 2 tablespoons water
  • 1 pound small mushrooms, quartered
  • 1 tablespoon minced onion
  • 1 cup heavy cream
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

Instructions

  1. On waxed paper, coat each chicken breast half with 1/4 cup of flour.
  2. In a 12-inch skillet, cook the chicken in hot margarine over medium heat until lightly browned on all sides. Cook a few pieces at a time if necessary.
  3. Set the cooked chicken aside.
  4. In the same skillet, cook the mushrooms and minced onion in the drippings over medium heat for 5 minutes, stirring frequently.
  5. Stir in the heavy cream, salt, and pepper; blend well.
  6. Return the chicken to the skillet.
  7. Reduce heat to low, cover, and simmer for 20 minutes or until the chicken is fork-tender.
  8. Remove the chicken from the skillet and keep warm.
  9. In a cup, blend 1 tablespoon of flour with 2 tablespoons of water to make a slurry.
  10. Gradually add the flour mixture to the skillet liquid, stirring constantly until the sauce thickens.
  11. Spoon the sauce over the chicken before serving.
