  2. Chop tomatoes and add to the oil with salt, pepper, oregano, and parsley. Simmer uncovered for 25 minutes, stirring occasionally.
  3. Meanwhile, pound chicken breasts between pieces of waxed paper until thin.
  4. Dip chicken in beaten eggs, then in a mixture of bread crumbs and grated Parmesan cheese.
  5. Saute in butter until browned on both sides.
  6. Place chicken in a shallow baking dish, top with sauce, and slices of mozzarella cheese.
  7. Bake uncovered in a 350°F oven for 20 to 25 minutes.
