Tips & Substitutions

For added flavor, consider marinating the chicken in a mixture of olive oil, lemon juice, and herbs before cooking. You can substitute brown rice for white rice for a nuttier flavor and extra fiber. If zucchini isn't available, yellow squash works well too. For a creamier texture, stir in a splash of heavy cream or half-and-half before serving.

Serving Suggestions

Serve Chicken Milano over the prepared rice for a complete meal. It pairs beautifully with a side of steamed vegetables or a fresh garden salad. For a heartier option, consider serving it with crusty bread to soak up the delicious sauce. This dish also complements well with a light white wine.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a skillet over medium heat until heated through, adding a splash of water or broth to prevent drying out. Alternatively, use the microwave for quick reheating, stirring occasionally.

Frequently Asked Questions

Can I use frozen chicken breasts for this recipe?

Yes, you can use frozen chicken breasts, but it's best to thaw them first for even cooking. If using frozen, increase the cooking time slightly and ensure the chicken is cooked through to an internal temperature of 165°F.

Can I make this dish vegetarian?

Absolutely! To make a vegetarian version, substitute the chicken with firm tofu or chickpeas and use vegetable broth instead of chicken broth. You can also add more vegetables like bell peppers or spinach for added flavor and nutrition.

What can I do if I don't have tomato soup?

If you don’t have tomato soup, you can use a can of diced tomatoes or crushed tomatoes with a bit of added seasoning like oregano and sugar to mimic the flavor. Alternatively, make a simple homemade tomato sauce with fresh tomatoes, garlic, and basil.
