  • 1 cup chicken broth

Instructions

  1. Cut each chicken breast in half.
  2. Place each between waxed paper and flatten with a mallet to about 1/8 inch thick.
  3. Sprinkle with salt, pepper, and herbs; set aside.
  4. Whip the butter until fluffy and stir in the herbs.
  5. Cut cheese lengthwise into 8 pieces.
  6. Spread herb butter on cheese and on the chicken breasts, saving some butter for sauce.
  7. Place a stick of cheese on each breast and roll up, tucking in the ends to seal.
  8. Coat the rolled chicken in flour.
  9. Dip in beaten eggs, then roll in bread crumbs.
  10. Place in a flat baking dish and bake uncovered in a 350°F oven for 20 minutes.
