Chicken Nicoise

Ingredients

  • 1 lb. boned and skinned chicken breasts
  • 1 green pepper, sliced
  • 1 yellow onion, quartered
  • 2 cloves garlic, minced
  • 1 Tbsp. oil
  • 1 bay leaf
  • 1/2 tsp. dried thyme
  • 1 tsp. dried parsley
  • 1 box vermicelli or thin spaghetti
  • 1 can whole peeled tomatoes
  • 1 small can tomato paste
  • 1 can chicken broth
  • salt and pepper

Instructions

  1. In a frying pan, sauté the green pepper, onion, and garlic in the oil until the onions are softened.
  2. Chop the canned tomatoes coarsely and add them to the pan.
  3. Add the tomato paste and dilute with some of the liquid from the canned tomatoes.
  4. Add the chicken broth, bay leaf, thyme, parsley, salt, and pepper to the pan.
  5. Simmer the mixture until flavors meld and the sauce thickens.
  6. Meanwhile, cook the vermicelli or thin spaghetti according to package instructions.
  7. Cook the chicken breasts until fully done, then slice or serve whole.
