Ingredients

  • 1 Tbsp. oil
  • 3/4 lb. boneless, skinless chicken breast
  • 1 c. broccoli flowerets
  • 1 c. thawed frozen green peas
  • 1 carrot, cut in strips
  • 1 small onion
  • 1 can chicken broth
  • 1/2 tsp. dried basil leaves
  • dash of pepper
  • 1 1/2 c. Minute brown rice (uncooked)
  • 1/4 c. grated Parmesan cheese

Instructions

  1. Heat oil in a large skillet.
  2. Add chicken and cook, stirring until browned.
  3. Add broccoli, peas, carrot, and onion; cook and stir until vegetables are tender-crisp.
  4. Stir in chicken broth, dried basil, and pepper.
  5. Bring to a boil.
  6. Stir in uncooked rice.
  7. Return to a boil.
  8. Reduce heat to low; cover and simmer for 5 minutes.
  9. Remove from heat and let stand for 5 minutes.
  10. Stir in grated Parmesan cheese before serving.
