  • 4 lb. chicken parts

  • 24 oz. pkg. frozen baby lima beans
  • 10 oz. pkg. frozen okra

Instructions

  1. Place chicken parts in a large kettle.
  2. Fill the kettle nearly full with water.
  3. Add a dash of salt and pepper.
  4. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
  5. Remove chicken from broth to cool and skim fat from the broth.
  6. Measure broth and pour into a 10-quart pot; add enough water to make a total of 18 cups.
  7. Add seasonings, sliced onions, celery, carrots, and bay leaves; bring to a boil.
  8. Remove skin and bones from the cooked chicken and cut into small chunks.
  9. Add frozen corn, lima beans, okra, and chicken to the pot.
  10. Bring to a boil again, then reduce heat, cover, and simmer for 90 minutes.
  11. Remove bay leaves before serving.
