Ingredients

  • 2 c. cubed cooked chicken
  • 1/2 tsp. curry powder
  • 1/4 tsp. salt
  • 1/4 tsp. paprika
  • pepper to taste
  • 2 to 3 c. shredded lettuce
  • 1 large cucumber, sliced
  • 1 c. macaroni, cooked and drained
  • 1 large green pepper, chopped
  • 1 1/2 c. mayo or salad dressing
  • 2 Tbsp. milk
  • 2 Tbsp. lemon juice
  • 2 tomatoes, cut into wedges
  • 2 Tbsp. snipped parsley

Instructions

  1. In a mixing bowl, combine the cubed cooked chicken with curry powder, salt, paprika, and pepper.
  2. Toss to mix the chicken and spices well.
  3. In a clear glass salad bowl, layer shredded lettuce, the seasoned chicken, sliced cucumber, cooked and drained macaroni, and chopped green pepper.
