Chicken Stack-Up Salad
A colorful layered chicken salad featuring tender seasoned chicken, crisp lettuce, fresh vegetables, and creamy dressing, perfect for light lunches or entertaining guests.
Ingredients
- 2 c. cubed cooked chicken ⓘ
- 1/2 tsp. curry powder ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. paprika ⓘ
- pepper to taste ⓘ
- 2 to 3 c. shredded lettuce ⓘ
- 1 large cucumber, sliced ⓘ
- 1 c. macaroni, cooked and drained ⓘ
- 1 large green pepper, chopped ⓘ
- 1 1/2 c. mayo or salad dressing ⓘ
- 2 Tbsp. milk ⓘ
- 2 Tbsp. lemon juice ⓘ
- 2 tomatoes, cut into wedges ⓘ
- 2 Tbsp. snipped parsley ⓘ
Instructions
- In a mixing bowl, combine the cubed cooked chicken with curry powder, salt, paprika, and pepper.
- Toss to mix the chicken and spices well.
- In a clear glass salad bowl, layer shredded lettuce, the seasoned chicken, sliced cucumber, cooked and drained macaroni, and chopped green pepper.
