Ingredients

  • 1 cup uncooked macaroni
  • 1 cup low-fat cottage cheese
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 tablespoon Parmesan cheese
  • 4 ounces thinly sliced part-skim mozzarella cheese
  • 1 cup chopped red or green peppers
  • 1 zucchini, thinly sliced
  • 1 cup chicken broth
  • 1 onion, thinly sliced
  • 8 ounces can tomato paste
  • 1 tablespoon bread crumbs

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Spray an 8-inch baking dish with cooking spray (PAM).
  3. Layer the uncooked macaroni in the baking dish.
  4. Spread cottage cheese over the macaroni and sprinkle with basil and oregano.
  5. Add chopped peppers, sliced zucchini (or broccoli) as layers over the cheese.
  6. Evenly distribute sliced mozzarella cheese over the vegetables.
  7. Pour chicken broth over the entire mixture.
  8. Spread tomato paste over the top.
  9. Sprinkle bread crumbs and Parmesan cheese on top.
  10. Cover the dish with aluminum foil.
  11. Bake for 1 hour at 350 degrees Fahrenheit.
