Ingredients

  • 1 (20 oz.) can pineapple
  • 1 Tbsp. cornstarch
  • 1/4 tsp. hot red pepper flakes
  • 2 medium carrots
  • 1 green bell pepper
  • 2 cloves garlic
  • 3 Tbsp. soy sauce
  • 1 tsp. white vinegar
  • 1 onion
  • 1 lb. boneless pork butt
  • 2 Tbsp. oil
  • 2 Tbsp. ginger root

Instructions

  1. Drain the pineapple and reserve 3 tablespoons of the juice.
  2. Mix the reserved pineapple juice with 1/2 cup of water, soy sauce, cornstarch, vinegar, and red pepper flakes. Set aside.
  3. Slice the carrots and green bell pepper.
  4. Cut the pork into bite-sized pieces.
  5. Heat oil in a wok or large skillet over medium-high heat.
  6. Add the pork and cook until browned and cooked through.
  7. Add crushed garlic and ginger, cook for 1 minute.
  8. Add carrots, green bell pepper, and quartered onion, stir-fry until vegetables are tender-crisp.
  9. Pour in the prepared sauce, add pineapple chunks, and cook until the sauce has thickened.
  10. Serve hot with steamed rice.
