A hearty Chinese-inspired casserole featuring savory ground beef, vegetables, and crispy chow mein noodles, perfect for a comforting family meal with rich flavors.

Ingredients

  • 1 1/2 lb. ground beef
  • 2 Tbsp. oil
  • 2 medium onions, chopped
  • 1 cup celery, diced
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 cup raw rice
  • 2 Tbsp. soy sauce
  • 1/4 tsp. pepper
  • 1 can crispy chow mein noodles

Instructions

  1. Brown the ground beef in oil in a skillet.
  2. When the meat is no longer pink, drain off the fat.
  3. Add chopped onions, diced celery, cream of mushroom soup, and cream of chicken soup to the meat.
  4. Rinse each can of soup with hot water about half full and add to the meat mixture.
  5. Simmer the mixture for a few minutes.
  6. Stir in raw rice, soy sauce, and pepper.
  7. Turn the mixture into a large greased casserole dish.
  8. Cover and bake for 30 minutes.
  9. Remove the cover and bake for another 30 minutes.
  10. Cover with crispy chow mein noodles and bake for an additional 15 minutes.
