Ingredients

  • 4 eggs
  • 1 3/4 cups sugar
  • 1 1/2 cups oil
  • 3 cups grated carrots
  • 1 (13 or 20 oz.) can crushed pineapple, well drained
  • 1/2 cup flaked coconut
  • 1/2 cup broken walnuts
  • 1/2 cup raisins
  • 2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Instructions

  1. Combine eggs, sugar, and oil; beat well.
  2. Add grated carrots, well-drained crushed pineapple, flaked coconut, broken walnuts, and raisins; mix well.
  3. Add whole wheat flour, baking soda, cinnamon, and nutmeg; mix well.
  4. Pour batter into a greased and floured 10 x 14-inch pan.
  5. Bake at 350°F for 45 minutes.
