Ingredients

  • 2 lbs. grouper or similar fish
  • juice from about 5 limes
  • 5 cloves garlic, crushed
  • 1 Tbsp. oil
  • 1 Tbsp. oregano
  • 2 cans coconut milk, unsweetened
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 14 oz. can tomatoes
  • 2 chicken stock cubes
  • parsley

Instructions

  1. Combine lime juice, oregano, and half the garlic in a bowl.
  2. Marinate the fish in this mixture for at least 30 minutes.
  3. Heat oil in a large pan over medium heat.
  4. Add chopped onion and green pepper; cook until softened.
  5. Add remaining garlic and cook for another minute.
  6. Pour in coconut milk and canned tomatoes.
  7. Add chicken stock cubes and stir until dissolved.
  8. Place marinated fish into the sauce.
  9. Simmer until the fish is cooked through and flavors meld, about 15-20 minutes.
  10. Garnish with chopped parsley before serving.
