Ingredients

  • 2 cups flour
  • 1/2 cup butter or oleo
  • 1/4 cup packed brown sugar
  • 3 eggs
  • 2 cups brown sugar, packed
  • 1/2 teaspoon salt
  • 1 cup finely shredded coconut
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, butter, and 1/4 cup brown sugar thoroughly.
  3. Press the mixture firmly into the bottom of a lightly greased 9 x 13-inch oblong pan.
  4. Bake for 10 minutes.
  5. In a separate bowl, beat eggs, 2 cups brown sugar, and salt together thoroughly.
  6. Stir in shredded coconut, raisins, chopped walnuts, and lemon juice.
  7. Spread the mixture evenly over the partially baked bottom layer.
  8. Bake for about 25 minutes until the top is lightly browned.
  9. Allow to cool before cutting into 3 x 1-inch bars.
