Ingredients

  • 3/4 cup packed brown sugar
  • 1/3 cup butter
  • 3 tablespoons light corn syrup
  • 2 tablespoons instant coffee or strong brewed coffee
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon vanilla
  • 8 cups popped popcorn
  • 1 cup peanuts

Instructions

  1. Butter sides of a heavy 1 1/2-quart saucepan.
  2. Combine brown sugar, butter, corn syrup, instant coffee, and salt in the saucepan.
  3. Bring mixture to boiling over medium heat.
  4. Cook for 5 minutes, stirring once or twice.
  5. Remove from heat.
  6. Stir in baking soda and vanilla.
  7. Pour the hot caramel over popcorn and peanuts in a 17 x 12 x 2-inch baking pan.
  8. Stir to coat evenly.
  9. Spread mixture evenly in the pan.
  10. Bake in a 300°F oven for 15 minutes.
  11. Stir the mixture.
  12. Bake for an additional 5 minutes.
  13. Stir before serving.
