- Butter sides of a heavy 1 1/2-quart saucepan.
- Combine brown sugar, butter, corn syrup, instant coffee, and salt in the saucepan.
- Bring mixture to boiling over medium heat.
- Cook for 5 minutes, stirring once or twice.
- Remove from heat.
- Stir in baking soda and vanilla.
- Pour the hot caramel over popcorn and peanuts in a 17 x 12 x 2-inch baking pan.
- Stir to coat evenly.
- Spread mixture evenly in the pan.
- Bake in a 300°F oven for 15 minutes.
- Stir the mixture.
- Bake for an additional 5 minutes.
- Stir before serving.
