Ingredients

  • 1 stick margarine
  • 1 (3 oz.) package cream cheese
  • 1 cup flour
  • 2 teaspoons minced onion
  • 1/2 cup grated cheese
  • 2 eggs
  • 1/2 cup milk
  • paprika
  • meat (your choice; chicken, crab, shrimp, or ham)

Instructions

  1. Soften the cream cheese and mix it with margarine and flour until well combined.
  2. Divide the mixture into 24 small balls for very small muffin tins or 18 for small 2-inch tins.
  3. Place each ball in a muffin tin and flatten it to form a crust.
  4. Layer minced onion, your choice of meat, and grated cheese in each crust.
  5. Refrigerate or freeze the assembled mini quiches if desired.
  6. Just before serving, beat eggs and milk together and pour over each mini quiche.
  7. Sprinkle paprika on top of each.
  8. Bake at 450°F (232°C) for 10 minutes.
  9. Reduce temperature to 350°F (177°C) and bake for an additional 10 minutes or until the tops are browned.
  10. Serve hot.
