Consomme Stuffing

Ingredients

  • 1 medium onion, finely chopped
  • 1/2 to 3/4 cup diced celery
  • 1/2 cup margarine
  • 1 (6 oz.) can sliced mushrooms, drained
  • 2 oz. or more chopped pecans
  • 2 eggs
  • 1 (7 oz.) package stuffing mix
  • 1 (10 oz.) can chicken consomme, undiluted

Instructions

  1. Saute onion and celery in margarine.
  2. Add mushrooms and chopped pecans to the sautéed mixture.
  3. Beat eggs in a separate bowl and then add to the mixture.
  4. Add the consomme to the mixture and mix well.
  5. Combine with stuffing mix and bake as desired.
