Continental Veal

Ingredients
- 3 tsp. soy sauce ⓘ
- 2 lb. lean veal, cubed ⓘ
- 2 onions, diced ⓘ
- 1 clove garlic, diced fine ⓘ
- 1 c. water, stock or tomato juice ⓘ
- 1/4 tsp. sugar ⓘ
- 1/2 tsp. pepper ⓘ
- 1 tsp. rosemary or marjoram ⓘ
- 1/2 tsp. salt ⓘ
- 2 small carrots, sliced thin ⓘ
- 4 large green peppers ⓘ
- 2 small cans mushrooms ⓘ
- 1/2 lb. fresh mushrooms ⓘ
- 1 tsp. grated lemon rind ⓘ
Instructions
- Measure soy sauce into a large skillet and brown the veal in oil with onions and garlic, about 15 minutes.
- Add 1 cup water, stock, or tomato juice, along with sugar, pepper, and rosemary or marjoram. Add salt. Cover and cook until veal is tender.
- Approximately 1 hour and 15 minutes before serving, add sliced carrots, green peppers, and mushrooms.
- Just before serving, stir in grated lemon rind.
- Add extra water, stock, or tomato juice as necessary during cooking.
