Ingredients

  • 1 cup warm water
  • 2 packages active dry yeast
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon salt
  • 4 to 4-1/2 cups unbleached all purpose flour

Instructions

  1. Combine the warm water and yeast in a large bowl.
  2. Let the mixture stand until yeast is foamy, about 5 minutes.
  3. Stir in melted butter, sugar, eggs, and salt.
  4. Beat in flour, 1 cup at a time, until dough is too stiff to mix, adding up to 4-1/2 cups as needed.
  5. Cover and refrigerate the dough for 2 hours or up to 4 days.
  6. Grease a 13 x 9 inch baking pan.
  7. Turn the chilled dough out onto a lightly floured board.
  8. Divide the dough into 24 equal-sized pieces.
  9. Roll each piece into a smooth round ball and place in even rows in the prepared pan.
  10. Cover and let the dough balls rise until doubled in volume, about 1 hour.
  11. Preheat the oven to 375°F (190°C).
  12. Bake the rolls until golden brown, about 15 to 20 minutes.
  13. Brush warm rolls with melted butter, if desired, before serving.
