Ingredients

  • 3 c. whole kernel corn
  • 1 lb. jumbo lump crabmeat
  • 1 c. butter
  • 1 pt. heavy whipped cream
  • 1/2 c. sliced green onions
  • 1/2 c. chopped parsley
  • 1/4 c. diced garlic
  • 1 c. flour
  • 2 1/2 qt. shellfish stock
  • 1 c. chopped onions
  • 1 c. chopped celery
  • 1/2 c. chopped red bell pepper
  • salt

Instructions

  1. In a 2-gallon stockpot, melt butter over medium-high heat.
  2. Add whole kernel corn, chopped onions, chopped celery, chopped red bell pepper, and diced garlic.
  3. Saute for five to ten minutes or until vegetables are wilted.
  4. Gradually stir in flour and cook, stirring constantly, for about 2 minutes.
  5. Slowly add shellfish stock, stirring constantly to avoid lumps.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Stir in heavy whipped cream and season with salt and white pepper to taste.
  8. Gently fold in jumbo lump crabmeat and chopped parsley.
  9. Simmer for an additional 5 minutes, being careful not to break up the crabmeat.
  10. Serve hot, garnished with sliced green onions if desired.
