Ingredients

  • 3-4 lb corn beef brisket
  • 2 small onions sliced
  • 2 bay leaves
  • 2 cloves garlic minced
  • 6 whole cloves
  • 6 medium potatoes pared
  • 6 small carrots pared
  • 6 cabbage wedges

Instructions

  1. Rinse the corn beef brisket well and barely cover it with hot water in a large pot.
  2. Add sliced onions, bay leaves, minced garlic, and whole cloves to the pot.
  3. Cover and simmer about 1 hour per pound or until the meat is tender.
  4. Remove the meat from the liquid and add potatoes and carrots to the pot.
  5. Cover and bring to a boil, then cook for 10 minutes.
  6. Add cabbage wedges and cook for an additional 20 minutes.
  7. Glaze the cooked meat with mustard and brown sugar.
  8. Place the meat in the oven and bake at 350°F (175°C) for 15-20 minutes.
  9. Note: Do not skip baking as it helps prevent the meat from drying out.
