Ingredients

  • 1 onion, chopped
  • 5 Tbsp. bacon fat
  • 1 clove garlic, chopped
  • 1 can cream-style corn
  • 1 can whole kernel corn, drained
  • 1 egg, beaten
  • 2 c. milk
  • 1/2 c. corn meal
  • 1/4 bell pepper, chopped
  • red pepper
  • black pepper
  • salt
  • bread crumbs
  • butter or oleo

Instructions

  1. Saute onion, garlic, and bell pepper in bacon fat.
  2. Add cream-style corn and whole kernel corn.
  3. Add beaten egg mixed with milk.
  4. Stir in corn meal and season to taste. Cook over medium heat until thick.
  5. Pour mixture into a buttered casserole dish.
  6. Sprinkle top with bread crumbs and dot with butter.
  7. Bake for 1 hour at 350°F.
