Ingredients

  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 1/4 cups yellow cornmeal
  • 1 cup whole kernel corn
  • 1 can black olives, chopped
  • 1 teaspoon salt
  • 2 cups soy milk
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder

Instructions

  1. Saute onion and green pepper in 1/4 cup water in a nonstick frying pan.
  2. Mix sautéed vegetables with remaining ingredients.
  3. Bake at 350°F for 1 hour.
