Ingredients

  • 12 oz. package cornbread mix or 1 pone cornbread
  • 1 raw turkey liver
  • 2 cups finely chopped celery
  • 3/4 cup oleo
  • 1 cup finely chopped onion
  • 1/2 cup chopped parsley
  • 1/2 teaspoon sage
  • 1/4 teaspoon pepper
  • 1/4 to 1/3 cup chicken broth
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon thyme
  • 1 1/2 cups chopped pecans

Instructions

  1. Prepare cornbread and allow it to cool.
  2. Dice the turkey liver and sauté in oleo for 5 minutes.
  3. Add chopped celery and onion to the liver mixture.
  4. Sauté for an additional 5 minutes.
  5. Crumble the cooled cornbread into a large bowl and add the sautéed mixture along with the seasonings.
  6. Stir in chopped pecans and chicken broth to the mixture.
  7. If cooking separately, place the mixture in a well buttered 3-quart casserole dish.
  8. Bake covered at 375°F for 30 minutes.
  9. Uncover and bake for an additional 15 minutes until golden.
