Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 egg white
  • 1/4 cup applesauce
  • 2 to 3 tablespoons honey
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a 9 or 10-inch square pan with cooking spray and flour.
  3. In a mixing bowl, combine cornmeal, flour, baking powder, and baking soda.
  4. In a separate bowl, whisk the egg white, applesauce, honey, and buttermilk until well blended.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
