Ingredients

  • 1/4 cup Wish-Bone Italian dressing
  • 1 medium onion, chopped
  • 1 pound sweet Italian sausage links with casing removed
  • 1/8 teaspoon pepper
  • 2 celery stalks, chopped
  • 4 Cornish hens
  • 1/2 cup toasted pine nuts
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon thyme
  • 2 cups fresh bread crumbs
  • 1 cup cooked chestnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook chopped onion and celery in Italian dressing, stirring until tender.
  3. Add sausage and cook for 5 minutes or until browned.
  4. Stir in bread crumbs, cooked chestnuts, toasted pine nuts, marjoram, and thyme.
  5. Stuff the hens with the mixture.
  6. Close cavities with skewers and tie legs together with string.
  7. Place hens in a roast pan on racks.
  8. Cover loosely with aluminum foil and roast for 1 hour.
  9. Remove foil and continue roasting for an additional 15 minutes, or until done.
