Ingredients

  • 2 Cornish hens
  • 1 tsp olive oil
  • 1/2 cup bread crumbs
  • 1 tsp minced onion
  • 1 clove garlic, minced
  • 1/2 cup dry vermouth
  • pepper
  • 1/2 cup chopped mushrooms
  • 1/4 cup chopped pecans
  • 1/2 tsp dried tarragon
  • 2 Tbsp skim milk

Instructions

  1. Rinse the hens in cool water, dry them, remove any visible fat, and sprinkle with pepper.
  2. Saute mushrooms in olive oil until tender.
  3. Add bread crumbs, chopped pecans, minced onion, minced garlic, dried tarragon, and pepper to the mushrooms, mixing well.
  4. Combine skim milk with one tablespoon of dry vermouth and add to the stuffing mixture to bind it.
  5. Loosely stuff the hens with the mixture and tie their legs together.
  6. Place hens, breast side up, on a rack in a baking pan.
  7. Roast at 350°F for 45 minutes, basting frequently with the remaining vermouth.
