Ingredients

  • 2 1/2 cups dry beans
  • 1 teaspoon salt
  • 1 pound sausage
  • 2 apples, cubed
  • 1 cup celery, chopped
  • 1 large onion
  • 1 clove garlic
  • 2 cans stewed tomatoes
  • 2 tablespoons brown sugar
  • 2 tablespoons mustard
  • 1 tsp. salt

Instructions

  1. Rinse the dry beans and cover with 8 cups of water. Bring to a boil, covered, and cook for 2 minutes.
  2. Remove from heat and let the beans stand for 1 hour.
  3. Add 1 teaspoon of salt to the beans and bring to a boil.
  4. Reduce heat, cover, and simmer for 1 hour.
