Ingredients

  • 1/2 cup diced celery
  • 1/4 cup diced green pepper
  • 1/4 cup minced onion
  • 3 tablespoons butter
  • 1 tablespoon flour
  • 1 (1 lb.) can tomatoes
  • 1 teaspoon sugar
  • dash of pepper
  • 1 bay leaf
  • 1 small sprig parsley
  • 1/4 teaspoon Worcestershire sauce
  • 3/4 pound crabmeat
  • 1 teaspoon salt

Instructions

  1. Saute celery, green pepper, and onion in butter for 5 minutes or until tender.
  2. Blend in flour.
  3. Gradually stir in tomatoes, then add sugar, salt, pepper, bay leaf, and parsley.
  4. Simmer gently, uncovered, for 30 minutes.
  5. Remove bay leaf.
  6. Add crab meat and Worcestershire sauce.
  7. Heat thoroughly before serving.
