Ingredients

  • 3 pkg. saltine crackers
  • 1 c. celery, diced
  • 1/2 c. chopped onion
  • 2 Tbsp. chopped fresh parsley
  • 4 hard-boiled eggs, sliced
  • 2 (14 1/2 oz.) cans chicken broth
  • 2 to 3 Tbsp. cornstarch
  • salt

Instructions

  1. Break up crackers into a large bowl; add diced celery, chopped onion, chopped fresh parsley, sliced hard-boiled eggs, salt, and pepper.
  2. Set aside 1/4 cup of chicken broth to mix in with the cornstarch.
  3. Heat the remaining chicken broth in a saucepan, then stir in the cornstarch mixture; keep stirring until the mixture thickens to a gravy-like consistency. Keep hot.
  4. Just before serving, pour small amounts of the hot broth mixture over the crackers; toss to moisten without making it too wet.
