Ingredients

  • 1 bag dry pinto beans
  • 3 cups chicken broth
  • 2 large onions, chopped
  • 1 clove garlic, chopped
  • 2 cups Monterey cheese
  • 8 large tortillas
  • 1 large ham hock
  • 2 pounds ground beef
  • 1 can green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon seasoned salt
  • 1 teaspoon allspice
  • 1 teaspoon black pepper
  • 1 cup celery, chopped

Instructions

  1. Soak pinto beans overnight.
  2. Drain beans and rinse well.
  3. Place beans in a large pot with the ham hock and cook until beans are tender.
  4. Chop the ham hock finely and return it to the beans.
  5. Add chicken broth to cook the beans fully.
  6. In a separate pan, cook ground beef until browned.
  7. Add chopped onions, garlic, green chilies, chili powder, cumin, oregano, seasoned salt, allspice, and black pepper to the beef and cook until vegetables are tender.
  8. Combine the beef mixture with the cooked beans.
  9. Stir in chopped celery and Monterey cheese.
  10. Warm tortillas and serve the chili with tortillas on the side.
