Ingredients

  • 3/4 cup flour
  • 1 1/2 tablespoons paprika
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 1 teaspoon dill seed
  • 2 chickens (3 to 3 1/2 pounds each), cut into serving pieces
  • 3/4 cup butter
  • 1 cup chopped onion
  • 1 tablespoon chopped pimento
  • 1 cup light cream or evaporated milk
  • 1 cup chicken bouillon
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine flour, paprika, salt, pepper, thyme, and dill seed in a paper bag.
  3. Add chicken pieces a few at a time; shake to coat well with the flour mixture.
  4. Heat butter in a large frying pan.
  5. Add chicken pieces and brown on all sides; remove from pan.
  6. Add chopped onion to the pan; sauté until lightly browned.
  7. Add chopped pimento to the onions.
  8. Stir in the remaining seasoned flour until well blended.
  9. Gradually add light cream or evaporated milk, stirring well.
  10. Stir in chicken bouillon and fresh lemon juice.
  11. Place the browned chicken in a casserole dish.
  12. Pour the sauce over the chicken.
  13. Cover and bake for 50 to 60 minutes.
  14. Remove from oven and serve hot.
