Creamed shrimp features tender shrimp in a rich, creamy sauce with green peppers and pimentos, perfect for serving on toast or with patty shells for an elegant appetizer.

Ingredients

  • 4 Tbsp. butter
  • 5 Tbsp. flour
  • 1 1/2 cups milk
  • 1/2 cup cream
  • 1/2 small green pepper
  • 1/2 pimento
  • 2 cups whole shrimp
  • 2 egg yolks
  • 1/2 tsp. Worcestershire sauce
  • salt and pepper to taste

Instructions

  1. Melt butter in a saucepan.
  2. Blend in flour until smooth.
  3. Gradually add milk and cream, cooking slowly and stirring constantly until thickened and smooth.
  4. Add chopped green pepper, pimiento strips, and whole shrimp to the sauce.
  5. When hot, beat egg yolks and add them to the mixture, cooking a moment.
  6. Season with Worcestershire sauce, salt, and pepper.
  7. Serve on patty shells or toast.
