Ingredients

  • 1 green bell pepper, seeded and cut in strips
  • 1 rib celery, minced
  • 1/2 small onion, minced
  • 1 tsp. olive oil
  • 1 c. diced, fresh tomato
  • 1 small bay leaf
  • 1/2 tsp. minced fresh thyme
  • pinch of ground cloves
  • dash of Tabasco sauce
  • salt and pepper as desired
  • 1/2 lb. sole, flounder or other whitefish fillets

Instructions

  1. Sauté bell pepper, celery, and onion in olive oil until tender, but not brown.
  2. Stir in fresh tomato, bay leaf, thyme, cloves, Tabasco, salt, and pepper.
  3. Simmer gently for 5 to 10 minutes.
