Ingredients

  • 4 pork chops (1 inch thick)
  • 3 Tbsp. olive oil
  • 3 Tbsp. lemon juice
  • 1 Tbsp. Dijon-style mustard
  • 1/2 tsp. cayenne pepper
  • 2 eggs
  • 1 c. dry bread crumbs
  • 1 Tbsp. wine vinegar
  • 1/2 c. grated Parmesan cheese
  • 1 clove garlic
  • 1 tsp. dried basil
  • 1 tsp. dried thyme leaves

Instructions

  1. Trim excess fat from the edges of the pork chops.
  2. Dip the pork chops in beaten eggs, then coat thoroughly with dry bread crumbs mixed with Parmesan, garlic, basil, and thyme.
  3. Broil the breaded chops on a lightly greased rack about 8 inches from the heat source for 10 minutes, until golden and cooked through.
