Ingredients

  • 4 cube steaks
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. butter or margarine
  • 2 large tomatoes
  • 2 Tbsp. chopped red onion
  • 3 Tbsp. chopped celery
  • 3 Tbsp. chopped green chile peppers
  • 1/2 tsp. mustard seed
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. chopped parsley
  • dash of black pepper
  • oil

Instructions

  1. Start making the salsa.
  2. In a bowl, combine the chopped tomatoes, chopped red onion, chopped celery, chopped green chile peppers, mustard seed, chopped parsley, red wine vinegar, 1/4 teaspoon salt, and black pepper.
  3. Stir in oil.
  4. Let salsa stand for a few minutes for flavors to blend.
  5. In a skillet, heat butter or margarine.
  6. Brown the cube steaks in butter on both sides until browned.
  7. Reduce heat and cook, uncovered, for a few more minutes until cooked to your liking.
  8. Sprinkle with 1/4 teaspoon salt and pepper.
  9. Arrange steaks on a hot serving plate.
  10. Spoon a little salsa over each steak.
  11. Serve remaining salsa alongside.
  12. Serve with sour cream, grated cheese, and tortilla chips.
