Ingredients

  • 1 to 2 large onions, finely chopped
  • 1/4 cup butter
  • 2 tablespoons curry powder
  • salt to taste
  • pepper to taste
  • 6 cups chicken broth
  • 2 cups sliced carrots
  • 1 cup rice, uncooked
  • 1 quart whole tomatoes
  • 1 cup cream
  • 1 cup milk

Instructions

  1. Saute onions in butter until tender.
  2. Add curry powder, salt, and pepper; cook for 5 minutes.
  3. Add chicken broth, sliced carrots, uncooked rice, and whole tomatoes.
  4. Cook for 30 minutes, stirring occasionally.
  5. Adjust seasoning with salt and pepper if needed.
  6. Stir in cream and milk just before serving, do not boil.
  7. Optional: add a little butter at the end for extra richness.
