Ingredients

  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 2 Tbsp vanilla
  • 1 tsp cloves
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 3 eggs
  • 1 box raisins
  • 1 cup shortening
  • 2 1/2 cups sugar
  • 1 cup nuts
  • 2 cups applesauce
  • 4 1/2 cups flour
  • 1 small container candied fruit
  • 20 oz crushed pineapple
  • 1 small bottle maraschino cherries

Instructions

  1. Cream shortening and sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Mix raisins and nuts with a small portion of the flour to prevent sticking.
  4. Sift remaining flour together with soda, salt, and spices.
  5. Add dry ingredients to the creamed mixture along with vanilla, candied fruit, applesauce, and crushed pineapple.
  6. Beat the batter well until smooth.
  7. Fold in the raisins and nuts; beat again to combine.
  8. Pour the batter into a greased and floured tube pan.
  9. Arrange maraschino cherries on top of the batter.
  10. Bake in a preheated oven at 325°F (160°C) for 2 hours or until a toothpick inserted in the center comes out clean.
