Ingredients

  • 1 lb. dates
  • 2 c. boiling water
  • 2 tsp. baking soda
  • 1 large pkg. candied fruit
  • 1 c. walnuts
  • 1 tsp. vanilla
  • 2 c. sugar
  • 2 eggs
  • 3 Tbsp. oil or shortening
  • 3 c. flour
  • 1/2 tsp. salt

Instructions

  1. Cut up the dates and add the boiling water and baking soda; let stand.
  2. Beat the sugar, eggs, and oil or shortening until well combined.
  3. Add the date mixture, candied fruit, and walnuts to the batter.
  4. Stir in the flour, salt, and vanilla.
  5. Pour the batter into a greased pan and bake in a slow oven for 1 1/2 hours.
