Ingredients

  • 1 1/8 cups minced yellow onion
  • 7 tablespoons butter
  • 7 tablespoons whole wheat pastry flour
  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 tablespoons tomato paste
  • 3 tablespoons brown sugar
  • 4 2/3 cups water
  • 6 chicken bouillon cubes
  • 3 1/2 cups water
  • 1 cup plus 2 tablespoons instant nonfat dry milk

Instructions

  1. In a stock pot, sauté the minced yellow onion in butter.
  2. Blend in flour, dried basil, oregano, salt, and pepper.
  3. Stir in tomato paste, brown sugar, 4 2/3 cups water, and chicken bouillon cubes.
  4. Blend together 3 1/2 cups water and dry milk until smooth.
  5. Add the milk mixture to the soup and heat, stirring constantly, until thickened and smooth.
  6. Add the tomatoes to the soup.
  7. Simmer, uncovered, for 12 to 15 minutes.
  8. Do not boil.
