Ingredients
- 1 1/8 cups minced yellow onion ⓘ
- 7 tablespoons butter ⓘ
- 7 tablespoons whole wheat pastry flour ⓘ
- 1 teaspoon dried basil ⓘ
- 1 teaspoon oregano ⓘ
- 2 teaspoons salt ⓘ
- 1/2 teaspoon pepper ⓘ
- 3 tablespoons tomato paste ⓘ
- 3 tablespoons brown sugar ⓘ
- 4 2/3 cups water ⓘ
- 6 chicken bouillon cubes ⓘ
- 3 1/2 cups water ⓘ
- 1 cup plus 2 tablespoons instant nonfat dry milk ⓘ
Instructions
- In a stock pot, sauté the minced yellow onion in butter.
- Blend in flour, dried basil, oregano, salt, and pepper.
- Stir in tomato paste, brown sugar, 4 2/3 cups water, and chicken bouillon cubes.
- Blend together 3 1/2 cups water and dry milk until smooth.
- Add the milk mixture to the soup and heat, stirring constantly, until thickened and smooth.
- Add the tomatoes to the soup.
- Simmer, uncovered, for 12 to 15 minutes.
- Do not boil.
