Ingredients

  • 2 Tbsp. margarine
  • 1 c. diced celery
  • 2 c. chopped cooked chicken
  • 1 c. diced onion
  • 1 1/2 c. chicken stock
  • 1 c. diced tomatoes
  • 3 Tbsp. flour
  • 3 Tbsp. olive oil
  • 1 tsp. seasoned salt
  • 2 c. mashed potatoes
  • 1 (9-inch) pie shell, uncooked
  • parsley
  • paprika

Instructions

  1. Melt margarine in a large skillet.
  2. Add diced celery and onion; simmer for 2 or 3 minutes.
  3. Add chopped cooked chicken and cook until heated thoroughly.
  4. Mix in diced tomatoes.
  5. Prepare the filling by combining chicken, vegetables, and tomatoes.
  6. Pour the filling into the uncooked pie shell.
  7. Spread mashed potatoes over the filling.
  8. Sprinkle parsley and paprika on top.
  9. Bake in the oven until the pie is heated through and the crust is golden.
