Drummond Rice Casserole

Ingredients

  • 1 lb. long grain rice
  • 2 1/4 c. water
  • 1/4 lb. butter
  • 3 pkg. beef broth
  • 1/2 c. slivered almonds
  • 1 c. onions, chopped
  • 1 lb. fresh mushrooms
  • pepper
  • seasoned salt
  • 1 pkg. frozen green peas
  • 1 (8 oz.) can water chestnuts, drained and sliced
  • 1 pkg. chicken broth mix

Instructions

  1. Cook rice in water until tender.
  2. Add butter, beef broth, and almonds to the cooked rice.
  3. Cook for 10 minutes.
  4. Saute onions in a small amount of butter until transparent, about 3 to 5 minutes.
  5. Saute mushrooms in the same pan.
  6. Add seasonings and combine all ingredients before serving.
